No-Cook Protein Bars!!!
Ready in 1 hour and 20 minutes (if put in the freezer). Makes 9 servings (I cut mine up a little smaller and made 12)
Ingredients:
- cooking spray
- 11/2 cup dry oatmeal
- 2 scoops chocolate whey protein
- 2 tbsp flaxseeds
- 1 cup nonfat powdered milk
- ¼ cup all natural peanut butter
- ¼ cup water
- 1 tsp vanilla
- ½ cup raisins (I added cranberries as well but it’s whatever meets your fancy)
Instructions:
1) Lightly spray an 8-inch square pan with cooking spray.
2) In a large bowl mix oatmeal, whey powder, flaxseeds and powdered milk.
3) In a separate bowl, whisk together peanut butter, water and vanilla. Add the peanut butter mixture to the dry ingredients and stir to form a sticky dough. Stir or knead in the raisins. (I found that I needed to add a bit more water at my discretion so that the mixture wasn’t as dry)
4) Using wet hands or a spatula (I used my hands, yo), spread the mixture evenly into the prepared 8-inch pan. Freeze for 1 hour (or refrigerate overnight – what I did) until mixture is firm enough to cut. Cut into 9 squares (or 12 ☺). Wrap individually and store in your refrigerator to grab on your way out the door.

I eat a lot of the South Beach Diet PB protein bars... not because I'm on their diet, but because they're good, but I'm getting totally sick of them. This sounds like a good/healthier way to mix it up! Thanks love.
This sounds good...I often eat the Genesoy PB bars (not cuz they're good) because they can actually last through a run/workout. I can probably make them gluten free for my wife with her special GF oats. Would it be cheating if I added chocolate chips?
Sounds good. I've been making my own granola bars for a few months now, but mine aren't quite as healthy (have honey, cornsyrup, and a bit of sugar). I might have to try those out.
